Tasting Notes

- Nose: Clean and well-defined, with delicate aromas of olive oil, apple, peach, toffee, strawberry and fruit syrup.
- Palate: The aromas are faithfully echoed on the palate, revealing notes of grape, apple, peach, olive oil, strawberry and fruit syrup, with a smooth and well-balanced finish.
Production Process
01.
Selective Harvesting
The grapes are harvested only when they reach their optimal level of ripeness (23 °Brix), ensuring the highest quality of the raw material.
02.
Reception and Selection
The grapes are carefully transported in polyethylene crates to preserve their integrity. Upon arrival at the winery, they are received, weighed and manually selected before entering the production process.
03.
Traditional Grape Pressing and Must Extraction
The selected grapes undergo traditional artisanal foot treading in the wine press, allowing the natural extraction of the must, which is collected for the next stage.
04.
Controlled Fermentation
The must is transferred to fermentation tanks, where temperature (maximum 30 °C) and density levels are carefully monitored until the optimal conditions for distillation are achieved.
05.
Copper Still Distillation
The fermented must is distilled in copper stills, with the initial fractions (heads) carefully removed to obtain a clean, balanced distillate of the highest quality.
06.
Quality Control and Final Product
Distillation is completed once the spirit reaches its optimal alcoholic strength (38%–48% Alc./Vol., ±1%), preserving the authenticity, purity and distinctive expression of the Uvina grape variety.
